although i don’t really know why there’s such a big fuss about cupcakes, here is my take on them.

pro tip: for each and every bite to be perfect (cake+icing), my (sort of) cupcakes prefer to be eaten with a spoon ;)


  • 11 tbs of sugar
  • 1 sachet of vanilla sugar
  • 170g butter
  • 4 egg yolks

then add:

  • 15 tbs of flour
  • half a sachet of baking powder (mix well with the flour first!)
  • ~ a cup of milk (to make the dough easier to spread)
spread the dough on a baking tray / a cake pan / some muffin tins*

and bake until brown (170° celsius heated air)
only took 5 mins or so for mine!

in the meantime beat:

  • 4 egg whites
  • 5 tbs sugar (add slowly)
when it is stiff, add whatever berries & as much of them as you like (i think red currants keep their shape best and make it pop).
give your cake(s) a cup and bake again for about 20 to 30 mins until the ‘icing’ gets slightly tanned on top.
they turned out much better than i expected!
